Ingredients: (Makes approximately 15 good-sized pancakes)
Dry –
*2 1/3 cup of Bob’s Red Mill Gluten Free All Purpose Baking Flour
*4 ts. Sucunat
*2 ts. Baking powder
*1 ts. Baking soda
*1 ts. Sea salt
*1 ts. Allspice
*1ts. Nutmeg
Wet-
* 2 ripe bananas
*2 tbs. black strap molasses
*1 whole can coconut milk
*1 ts. Vanilla extract
*3 tbs. extra virgin coconut oil
*2 tbs. ground flax seeds mixed with 6 tbs. water
Mix all dry ingredients together in a large bowl. In a separate bowl, mash bananas with black strap molasses. Add the rest of the “wet” ingredients in with the banana mixture. Now, add the wet ingredients into the large bowl with the dry ingredients. Stir them together. The pancake mixture will be pretty thick, so you can add extra water to your liking. Heat a griddle to medium or medium-low for several minutes. I use Spectrum’s Grapeseed Oil spray to coat the pan/griddle and use a 1/3 measuring cup to dollop them on. Let cook until they bubble and turn a darker brown around the edges…about 3 or 4 minutes. Flip them and allow cooking for another couple of minutes. Enjoy!

Me and my honey
Happy Belated Mama's Day to all you beautiful, hard working, dedicated and selfless mamas! The idea of having a blog has been lurking and floating around in my head for awhile, hiding behind the other bazillion things that are on my "to do" list. As my friends and family know, I have an insatiable thirst for knowledge related to natural parenting, health, food and lifestyle; amongst other things! My vision is to create a place where woman can come to get quick advice about recipes, diets, parenting choices, healing paths, and a host of issues without having to spend hours and hours researching the internet. I'll hook you up to links that I feel are essential sites for your favorites and others that might be helpful. Just found out your pregnant? No worries, I'll direct you to some super resources, help you with your diet and give you my list of "must have" items to prepare you for that babe. Go spend time with your little and big sweeties while I do most of the work. How do I have the time, you may ask? Well, besides being a stay at home mom, my husband takes his profession to new heights and lengths (of time). Plus, I really do love researching and finding the best of the best! This will certainly be a work in progress and a journey that I am truly anticipating with enthusiasm and wonder.
